Wine from spontaneous co-fermentation in carbonic maceration, a winemaking process associated with French Beaujolais wines. The grapes are whole-cluster fermented in a carbon dioxide atmosphere. This type of fermentation produces young wines, very fruity and light, with a characteristic bright neon color.

Vinos Pijoan is a small family business born in 2002, at the beginning of the boom of Mexican wines, and is dedicated to making authentic handmade wines with heart and integrity. Their philosophy is to create honest wines that speak to their voices as a family. They seek to incorporate the history of their terroir, reflecting its aridity, its morning fogs, the winds and the afternoon heat, followed by cold and cool nights. They seek to create wines that reveal the land’s diverse soils, ranging from the sands of the river banks and the decomposed oceanic granite, to the iron rich red soils. In these places, with the help of the human hand, the vine flourishes and rewards them with its fruit, which is managed with the care and respect that it deserves, bearing wines of great quality.

We are a small family business born in 2002, at the beginning of the Mexican wine boom, dedicated to making authentic wines with heart and integrity.

Vinos Pijoan was born from the hand of Pau Pijoan, a Mexican of Catalan origin, a veterinary researcher by profession, who embarked on an adventure that would completely change his path.

Without boasting of being an oenologist, his long career as a scientist laid the foundations for a disciplined and methodical study in the art of making wine.

The great advantage of a family winery is expressed in the importance of the different voices that speak through the wine, which beyond representing a product, represent a dialogue. Wine is another member of our family, a form of expression for each voice involved, where the result of the fruit and hand of the person who makes it is bottled telling a story.

At Vinos Pijoan our philosophy is to create honest wines that incorporate the history of our terroir as a region, reflecting its aridity, its morning fogs, the winds and the heat of the afternoon, followed by cold and crisp nights. Having a code of honesty with our drinkers. We seek to create wines that reveal the personality of our region from our perspective.
